What you will need are as follows: 60ml olive oil 4 finely chopped garlic cloves 6 anchovy fillets 400g finely chopped tomatoes 200ml dry white wine 500g spaghetti 300g mussels 800g marinara mix 200g peeled green prawns Torn parsley leaves Salt Now it’s time to begin cooking! Follow these three simple steps for the best spaghetti marinara. Step 1 Heat 2 tablespoons of oil in a large fry pan over medium-low heat and add garlic and anchovies. Cook for 1-2 minutes until anchovies have melted. Next, add tomatoes and wine and bring to a simmer, then cook for about 20 minutes on low heat. Step 2 Cook the pasta in a large pan of boiling salt water. Drain, then return to the pan and toss in a small amount of olive oil. Step 3 Add mussels to the pan of sauce and cook with cover for 1 minute while occasionally shaking the pan. Add the remaining seafood and cook for 2-3 minutes until the marinara mix and prawns are cooked through and the mussels have opened. Season to taste with salt and ground black pepper. Add the drained pasta, toss, then divide among bowls and serve garnished with parsley leaves. Classic Fish and Chips For classic fish and chips, we recommend Hunky Dory’s Flathead Fillets. Here are the ingredients needed: 4 large pontiac potatoes, peeled, cut into 1cm-thick chips 185g plain flour 330ml lager Sunflower oil 800g skinless flathead fillets Lemon wedges Iceberg lettuce wedges Step 1 Add chips to a large saucepan of lightly salted water boiled over high heat. Drain and dry completely. Step 2 Whisk flour, lager and 2 teaspoons salt in a bowl until it is smooth. Cover with plastic wrap and set aside at room temperature for 30 minutes. Step 3 Half-fill a deep-fryer or large saucepan with oil and heat to 160°C. Fry the chips, in batches, for 5-7 minutes until soft but still pale, then drain. Step 4 Preheat oven to low. Increase oil to 190°C. When hot, fry chips again, in batches, for a further 2-3 minutes until crisp and golden. Drain on paper towel, place on a tray, in a single layer, and keep warm in the oven. Step 5 Dust flathead fillets in the flour. Dip into the batter, one at a time, allowing excess to drain off. Carefully place into the hot oil. Cook the fish for 3-4 minutes until golden and crisp, then drain. Step 6 Remove chips from oven and sprinkle fish and chips with sea salt. Serve immediately with lemon wedges and iceberg lettuce. You will need: 500g fingerling potatoes, halved 2 tablespoons olive oil 1 1/2 teaspoons salt 1/2 teaspoon cracked black pepper 4 170 g skinless salmon fillets 2 1/2 tablespoons minced garlic 2 tablespoons fresh chopped parsley 1/3 cup freshly squeezed lemon juice 1/2 cup melted unsalted butter 3 bunches asparagus 2 tablespoons dry white wine 1 sliced lemon Follow these instructions and you will be able to enjoy baked salmon in no time! Step 1 Heat oven to 200°C. Using a large-rimmed baking sheet, toss together potatoes with olive oil, 1/2 tablespoon of garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Spread out in an even layer and roast for 15 minutes until they begin to soften and turn brown. Step 2 Move potatoes over to one side of the sheet pan and place salmon down the centre. Rub salmon evenly with 1 1/2 tablespoons minced garlic and 2 tablespoons parsley. Add asparagus to the opposite side of the pan. Step 3 Combine 1/4 cup lemon juice and 1/4 cup melted butter together and pour the mixture over salmon and asparagus. Season everything with salt and pepper. Step 4 Return to oven and continue baking for about 10 minutes or until the potatoes are golden and tender and the salmon is no longer transparent.
