Easy desserts to make at home

Jul 21, 2021Vanessa Stoicov

Does anyone else have a second dessert stomach? That even after a big meal you can always make room for something sweet? We get it – it’s why we’ve made sure our online grocer is packed with everything you need to whip up easy desserts at home.

To show you what we mean, we’ve put together some of our favourite easy dessert recipes for you to try – starting with vegan treats. All you need to do is grab a pen and paper and try not to drool!

Easy vegan desserts

For all our plant-based friends out there, you’ve got so many options for easy desserts. There’s been a huge surge in popularity in people adopting a plant-based diet, so let’s take a look at a few quick wins for when you’re craving a sweet treat.

Creamy vegan ambrosia

Have you ever tried creamy ambrosia? It’s a type of fruit salad that typically contains a variety of fruit, mini marshmallows and yoghurt. We think making a vegan version of this dish is amazing. Why? Using coconut yoghurt (and cream) instead of dairy-based yoghurt just amps up the flavour and it honestly tastes a bit like summer.

To make your very own creamy vegan ambrosia, you’ll need:

Mix all the ingredients together in a bowl and let it set in the fridge for an hour or so. Some recipes will even add a sprinkle of nuts or chocolate on top!

Vegan Cookies

When it comes to vegan cookies, we like to keep things simple. Grab yourself a tub of Eat Pastry peanut butter or chocolate chip cookie dough, which you can eat straight from the tub (we won't judge!) or bake into cookies. They’re ideal for that prime cookie hit without the stress of having to measure out dozens of ingredients.

Speaking of fast, have you ever tried a mug cake? Our friends at Botanika Blends make mug cakes in a choc chip banana bread flavour that you add water to and pop in the microwave – they’ll be cooked in around a minute.

Fruit salad with custard

Call us traditional, but we love nothing more than a bowl of Nature’s Charm coconut vanilla custard and fruit salad. Easy dessert recipes don’t require loads of ingredients, just your favourite flavours and textures, side by side.

Easy gluten-free desserts

If you’re allergic or intolerant to gluten, we’ve got some great news: you can find a bunch of options for your next dessert on iPantry. Let’s kick things off with cake!

Cake mixes

To get your cake fix, the legends over at Well & Good and The Monday Food Co both make incredible gluten-free cake mixes that are simple to prepare at home. You could also make some Bellarine triple chocolate brownies and smother them in fresh blueberries and Bulla thickened cream (is your mouth watering yet?!).

Flourless cake

Looking to treat yourself to a quick and easy flourless cake? Try this three-ingredient chocolate mug cake (it’s the DIY version of the one we mentioned earlier, but with chocolate).

You’ll need:

  • 57g chopped Cuvee dark chocolate
  • 2 tbsp Lakanto sweetener (it’s like sugar, but better!)
  • 1 room temperature egg.

To make the cake batter in the microwave, you’ll want to melt the chocolate slowly, then fold in the sweetener. When the chocolate isn’t hot to the touch, add the egg and whisk together.

Pour the batter into a greased microwave-safe mug, cook for about 1 minute at about 850 watts (check your microwave’s power settings) then allow the cake to cool. You can add cream and berries, or just go at it with a spoon (it’s up to you!).

Traditional dessert recipes

If you don’t follow a gluten-free or vegan diet, there are lots of different options for easy desserts to make at home. We’re big fans of Financiers by Emelia Jackson (the winner of Channel 10’s MasterChef reality TV show in 2020). Simply add unsalted butter and water to these mixes and voila – dessert is ready!

Alternatively, you could (quite literally) whip up some dark chocolate mousse. To make it for two people, grab 800g of slightly sweet dark chocolate and 800ml of Bulla thickened cream. Melt the chocolate with 100ml of the cream and leave to cool for 5 to 10 minutes. Whip the cream until peaks form, then add the chocolate in until entirely combined (making sure there are still peaks forming).

Sugar-free dessert recipes

If you’re avoiding sugar altogether, don’t panic – we’ve still got some easy desserts for you to try. One of our go-to's, especially in summer, is banana and coconut ice cream.

For this tasty dish, all you need is to peel and freeze a few bananas, then blend with a can of Ceres Organics coconut cream. You’ll want to eat this one right away (it doesn’t freeze properly).

For alternatives, you could use other frozen fruits, too. If you like the sound of this and are wanting to add a touch of sweetener, opt for either maple syrup or condensed coconut milk!

Lastly, we'll leave you with a taste of France with these easy sugar-free crepes. To make this dessert, you’ll need:

  • 1 C Atta flour
  • 2 large eggs
  • 1 tbsp Lakanto sweetener
  • ¼  tsp salt
  • 1½  C of milk of your choosing
  • 1 tbsp. butter
  • Fresh fruit, for serving.

Mix your dry ingredients (flour, sugar and salt) in a bowl to combine. Make a well and add the eggs, then slowly fold in the milk. Let the batter sit for 15 to 20 minutes at room temperature or until bubbles appear on the surface.

Over medium heat – and in a small skillet or pan – add ¼ cup of the mixture and cook until slightly golden brown on both sides. Repeat until you’ve used all the batter (or keep it in the fridge for a few days to make again).

Top your crepes with fresh fruit and you’ve got yourself a little slice of Paris at home.
